- 240g yogurt
- 1 egg
- 100cc milk
- 70g organic raisins
- Walnuts, unsalted, 50g
- 2 tablespoons maple (coconut sugar) syrup
- Fruit toppings (strawberries, bananas, blueberries, etc.)
How to cook
- Make the yogurt cream. Put 100g of yogurt into a colander lined with thick kitchen paper and leave to drain overnight.
- ULTRAMIX Pancake mix 200g (one bag), one egg, 100cc milk, 140g strained yogurt, and 70g raisins to make the dough.
- Cut the walnuts into large pieces with scissors. Cut the fruit toppings into bite-sized pieces.
- Heat oil (1 tablespoon of coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 1.5 to 2 minutes over low to medium heat. When bubbles appear, flip the batter over and cook the other side for 1.5 minutes.
- Stack the pancakes, top with yogurt cream, and top with fruit (strawberries, blueberries, etc.) and chopped walnuts. Drizzle with honey or coconut sugar syrup to taste.
