ULTRAMIX Pancake mix wheat bran scone recipe
A healthy scone recipe using wheat bran, which is rich in dietary fiber and minerals. You can easily make 18cm big scones. Serve with cream cheese.

ULTRAMIX Pancake mix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.
Ingredients
- ULTRAMIX Pancake mix 200g
- 1 egg
- 40g wheat bran
- 40g unsalted butter
- 1 teaspoon baking powder
- 50cc milk
- 30g dried cranberries (or dried blueberries)
- Cream cheese (as needed)
- Blueberries
- Mint (as needed)
How to cook
- Bring the butter to room temperature and cut it into 1cm cubes. Preheat the oven to 180℃.
- Mix eggs and milk in a bowl.
- In a separate bowl, add ULTRAMIX Pancake mix 200g (one bag) and 40g of wheat bran and mix thoroughly. Add butter cut into 1cm cubes and mix with your fingers until it becomes crumbly.
- Add ② and mix.
- Stir the dried cranberries (or blueberries) into the dough and bring together.
- Place a sheet of baking paper on top and place the dough (16cm in diameter) on it, stretched to a thickness of 1cm to 1.5cm. Using a knife, make radial cuts into the dough, each 1/8th of the way round.
- Bake in a preheated oven for 20-25 minutes. Garnish with cream cheese, blueberries and mint, if desired.
This scone will leave you full and full. It has a slightly sweet taste and a crispy texture. The cranberries add a nice texture and sourness. The scones will be about 18cm in diameter and will be very filling. You can also serve them with sour cream.
