Sri Lankan spice curry and naan

Naan made with ULTRAMIX Pancakemix and authentic Sri Lankan curry without wheat flour. Freshly baked crispy, slightly sweet naan and spicy curry with lemongrass are addictive.

You can make it with trans-fatty acid-free ULTRAMIX Pancakemix. Curry can be easily made using the all-purpose seasoning "Curry no Tsubo".

ULTRAMIX Pancakemix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancakemix 200g
  • 50g plain flour
  • 70ml water
  • 2 teaspoons olive oil
  • 1/3 teaspoon salt
  • 3.5 tablespoons of curry jar
  • 2 tablespoons soup base
  • 1 can of boiled tomatoes
  • 1 piece of ginger, 2 pieces of garlic
  • 1 onion
  • Vegetables and mushrooms (1 zucchini, 1 carrot, 1 king oyster mushroom)

How to cook

  1. Make the curry. Finely chop one piece of ginger, two cloves of garlic, and one onion. Cut four bell peppers into thick strips, one zucchini into 1.5 cm round slices, one carrot into chunks, and king oyster mushrooms into batons.
  2. Add oil to a frying pan and fry the ginger and garlic until fragrant, then add the onion and fry for about 10 minutes until caramelized, without browning.
  3. Add 1 can of tomatoes and stir fry over high heat for about 5 minutes to evaporate the water. Once the water has evaporated, add 3.5 tablespoons of curry paste (this time, original) and stir fry. Add 300g of chicken thighs (or sliced pork) and stir fry briefly.
  4. Add the peppers, zucchini, carrots, and king oyster mushrooms and stir fry briefly, then add 200ml of organic coconut milk and 1 tablespoon of soup base, cover and simmer for about 10 minutes. Finally, taste and add salt to taste.
  5. Make the naan. Mix 70g unsweetened yogurt, 50ml water, and 2 teaspoons of olive oil (※).
  6. In a separate bowl, ULTRAMIX Pancakemix 200g (one bag), 50g plain flour, and 1/3 teaspoon salt, then add the ingredients (※) and mix with chopsticks to make a dough. It will be lumpy at first, but it will settle as you knead it with your hands. (Be careful not to over-knead.)
  7. Roll the dough into a ball, then divide it into 4 balls and roll them into balls. Grease your hands and form them into naan shapes. You can also use a rolling pin to roll them out. The thickness should be about 0.5 mm.
  8. Cook in a frying pan without oil. Brown both sides over medium heat, then cover and steam cook for 3 minutes.

A gentle naan with a slight buttermilk aroma. If you don't want to go through the trouble of the process, you can make a simple, chewy naan-flavored pancake by simply mixing ULTRAMIX Pancakemix with 250ml of water and frying the batter in a frying pan. This also goes great with curry!

ULTRAMIX Pancakemix can be frozen. When ready to eat, simply thaw naturally and microwave for 20 seconds.
