Silver Dollar Pincho Pancakes
These adorable pancakes are made by layering small pancakes with fresh fruit and fastening them with sticks. Perfect for breakfast or parties that kids will love.

Ingredients
- ULTRAMIX Pancake mix 200g
- 1 egg
- 200ml milk
- Bananas, kiwi, strawberries, blueberries, raspberries, marshmallows, etc.
- Stick or rod
How to cook
- Cut the fruit.
- Add the eggs and milk to a bowl and mix well.
- Add the ULTRAMIX Pancake mix to ② and mix thoroughly.
- Put oil (or coconut oil) in a frying pan and heat it over medium heat. After turning off the heat, pour the batter into the frying pan with a spoon and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes. (About 3-4 cm in diameter)
- Stack the pancakes and chopped fruit together and secure with sticks.
- How to make pincho sticks: Stick your favorite sheath or masking tape on the top of a bamboo skewer. (You can buy cute stickers that can be folded in half.) If the skewer is too long after inserting it into the pancake, cut the bottom of the skewer to the desired length.
Mini pancakes cook easily, so be sure to turn off the heat before adding the batter. It's easy to make if you add about a teaspoon at a time. If you want them sweeter, you can add maple syrup or sprinkle powdered sugar on top. This recipe will make about 70 mini pancakes with a diameter of 3 to 4 cm.
