Hemp milk pancakes with salted peanut butter and oatmeal

Instead of cow's milk, we used plant-based milk (hemp milk in this case), mixed peanut butter, oatmeal, and mashed bananas, and baked these pancakes. They have a moist and chewy texture, and are very filling. The coarse salt adds a nice accent to the peanut butter. They are also topped with luxurious cacao nibs.

Ingredients

  • ULTRAMIX Pancakemix 100g
  • 1 egg
  • 200ml vegetable milk
  • 50g oatmeal
  • 200ml milk
  • 3 tablespoons peanut butter
  • 2 bananas
  • Walnuts (as needed)
  • Organic cacao nibs
  • Maple syrup (as needed)
  • A little coarse salt
  • Blueberries
  • 1 tablespoon organic coconut oil

How to cook

  1. Mash one ripe banana. Put the oatmeal and milk in a heat-resistant container, heat at 600W for 2 minutes, and leave to cool.
  2. Mix 1 egg, plant-based milk (hemp milk), and peanut butter (1 1/2 tablespoons) in a bowl, then add the oatmeal from step 1 and mashed banana and mix well.
  3. Add ULTRAMIX Pancakemix 100g (one bag) and mix gently to form a dough.
  4. Heat oil (or coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes.
  5. Stack the pancakes and top with sliced bananas and the remaining peanut butter diluted with maple syrup.
  6. Sprinkle with coarse salt, top with chopped walnuts and cocoa nibs, and garnish with blueberries, if desired.

The sweetness of the mashed banana, the aroma of the peanuts, and the flavor of the coconut oil go together to create a taste that is a bit like an Asian dessert. The plant-based milk (hemp milk) has a refreshing sweetness that doesn't overwhelm the other flavors.
The bitterness of the walnuts and cacao nibs topping and the sweetness of the peanut butter diluted with maple syrup are brought out by the saltiness of the coarse salt. When you add the Ultra Mix to the dough, mix it lightly. If you mix it too much, it will not rise easily.
