Purple sweet potato Pancakes with honey cream cheese

Ingredients

200 g Ultramix pancake mix

1 egg

200cc milk2

tbsp red potato powder

1.5 tsp lemon juice

1 tbsp honey (coconut sugar syrup)

80 g cream cheese

2 tbsp walnuts, salt-freeFruit for topping (strawberries, blueberries, etc.)

Instructions

1.Make the honey cream cheese. Take 80 g of cream cheese out of the fridge and soften it. Once softened, combine with 1 tbsp honey (or coconut sugar syrup).

2.Make the dough by mixing 1 200 g bag of ultramix, 1 egg, 220 cc of milk (or soy or almond milk), 2 tbsp red potato powder and 1.5 tsp lemon juice.

3.Cut the walnuts into large pieces with scissors. Cut the fruit for the topping into bite-size pieces.

4.Heat the oil (1 tbsp coconut oil) in a frying pan over medium heat. Once the heat is off, pour the batter into the pan and cook on a low to medium heat for 1.5-2 minutes, then when pits and bubbles appear, flip and cook the other side for 1.5 minutes.

5.Layer pancakes, top with honey (coconut sugar syrup) cream cheese and a large walnut topping.

These pancakes have a refreshing slightly sour taste. Yoghurt cream (drained yoghurt) is a useful substitute for whipped cream. It is good to make and keep it ready.ULTRAMIX pancakes can be frozen. When ready to eat, thaw naturally and heat in the microwave for 20 seconds.
