Pistachio and white chocolate chip pancakes

Pistachio and white chocolate chip pancakes. The natural coloring gives them a vibrant green color. The crunchy texture of the pistachios and the mildness of the white chocolate create a luxurious pancake.

ULTRAMIX Pancake mix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancake mix 200g
  • 1 egg
  • 200ml milk
  • Natural coloring, green, 1.5 teaspoons per lid
  • Unsalted pistachios 70g
  • 60g white chocolate chips
  • Maple syrup (as needed)

How to cook

  1. Peel the pistachios and chop them.
  2. Add the eggs and milk to a bowl and mix well.
  3. Add the ULTRAMIX Pancake mix and color powder to ② and mix thoroughly.
  4. Add the pistachios and white chocolate chips (leaving about 1/4 of each for topping) and mix to create a batter.
  5. Put oil (or coconut oil) in a frying pan and heat it over medium heat. After turning off the heat, pour the batter into the frying pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes. (6 slices with a diameter of about 12 cm)
  6. Layer the pancakes, drizzle with maple syrup and garnish with pistachios and white chocolate chips.

The slight green color of the natural coloring powder is so pretty and will lift your spirits. The fragrant and crunchy texture of the pistachios mixed into the batter adds an accent. The rich sweetness of the white chocolate gives the pancakes a rich flavor. You can adjust the amount of white chocolate chips to your liking.
