Hummus salad & millet Spanish omelette pancake sandwich
A healthy sandwich consisting of a thick crepe-like pancake stuffed with hummus salad and millet omelette.
It's voluminous and looks great in photos. The slightly sweet batter goes well with Spanish omelette and garlicky hummus salad. If you freeze the crepe-like pancakes, you can make them quickly on busy mornings and use them for lunch boxes.
You can make it with trans-fatty acid-free ULTRAMIX Pancake mix. How about a simple and healthy breakfast?

Ingredients
- ULTRAMIX Pancake mix 200g
- 1 egg
- 250ml milk
- [For millet Spanish omelette]
- 3 tablespoons organic millet
- 100ml water
- 3 eggs (for omelette)
- 1/2 each of red pepper and onion
- 1 potato
- 1 tablespoon each of grated cheese and milk
- Cucumber, lettuce, tomato, salt, pepper, olive oil (as needed)
- [For hummus]
- 60g chickpea flour
- 300ml water
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 2 teaspoons cumin
- 1 tablespoon olive oil
- 2 tablespoons sesame paste
- Black pepper to taste
- 1 clove of garlic
How to cook
- Organic Chickpea Flour
- Make the hummus. Put water in a bowl and, while stirring with a whisk, gradually add the chickpea flour and 1/2 the salt until dissolved. Add olive oil to a pot (not included in the recipe) and fry the chopped garlic over low heat. Just before the garlic starts to burn, add step 1 and cook while stirring to prevent lumps from forming. When it becomes heavy, remove from the heat and transfer to a bowl. Add the lemon juice, olive oil, sesame paste, cumin, and the remaining salt and mix well. Finally, add black pepper to taste and it's ready.
- Cut the cucumber into thin strips lengthwise and brown it in a frying pan. Thinly slice the tomato.
- Make the millet omelette. Put the washed millet and water in a pot and bring to a boil, then cover and simmer on low heat for 8 minutes. Turn off the heat and leave to steam for about 5 minutes.
- Cut the potatoes, onions and peppers into 1cm cubes and microwave (cover loosely with plastic wrap and microwave for 5 minutes at 600 watts). Mix the beaten eggs with milk and powdered cheese, add the millet and vegetables from step 3, and season with salt and pepper. Heat olive oil in a frying pan, pour in half of the egg mixture with vegetables and millet, stir, and when the eggs are about 80% done, fold the eggs together to make an omelette. Repeat for another omelette.
- Mix 1 egg and 250cc of milk in a bowl, then add ULTRAMIX Pancake mix 200g (one bag) to make a dough.
- Heat oil in a 20cm frying pan over medium heat, then turn off the heat and pour in a ladleful of batter. Swirl the pan to spread the batter thinly. Cook for 30 seconds to 1 minute, and when bubbles begin to form, flip. Flip and cook for 30 seconds to 1 minute, then remove from the frying pan.
- Spread out the dough from step 6, place hummus, browned cucumbers, and thinly sliced tomatoes on the other half, and fold it in half from the front to the back.
- Spread out the dough (step 6), place the lettuce and Spanish omelette on the other half, and fold it in half from the front to the back.
