Orange Cranberry Pancakes
Pancakes full of orange, baked with organic dried cranberries simmered in orange juice and orange juice.

Ingredients
- ULTRAMIX Pancakemix 200g
- 1 egg
- 150cc milk
- Organic cranberries 55g
- 100ml orange juice
- 1/2 orange
- 80g cream cheese
- 8g butter
- 1 teaspoon granulated sugar
- Vanilla oil
- 2 tablespoons pecans
How to cook
- Put 55g of organic cranberries and 100ml of orange juice in a pot and boil for 5-6 minutes, then cool. Peel about 1/3 of the orange zest with a peeler into thin chips.
- Make orange cream cheese. Mix 80g cream cheese, 8g butter, 1 teaspoon granulated sugar, half the orange zest, and an appropriate amount of vanilla oil (extract). If it is hard, place it in a bowl of hot water for a few minutes to soften it.
- Chop the pecans into large pieces with scissors.
- ULTRAMIX Pancakemix 200g (one bag), one egg, 150cc of milk, and 50cc of orange juice, then add the drained cranberries mentioned above to make the dough.
- Heat oil (1 tablespoon of coconut oil) in a frying pan over medium heat. Turn off the heat, pour the batter into the pan, and cook for 2 minutes over low to medium heat. Then flip it over and cook the other side for 1.5 minutes.
- Stack the pancakes, spread with orange cream cheese, and top with orange zest, chopped pecans, and orange slices.
The orange has a refreshing sourness, but the cranberries are also generously mixed in, making these pancakes very filling. The cranberries are sweet, so you can omit the granulated sugar from the orange cream cheese depending on your preference.
ULTRAMIX Pancakemix can be frozen. When ready to eat, simply thaw naturally and microwave for 20 seconds.
