Healthy Maccha and Blue berry Pancakes recipe

A beautiful matcha green pancake. The sweet, slightly matcha green tea flavour, buttermilk aroma and refreshing yoghurt cream make this the perfect breakfast. The yoghurt cream is light but has a rich texture.

You can make these pancakes with trans-fat free ULTRAMIX pancake mix. How about a simple healthy breakfast?

ULTRAMIX was created in the kitchen for baby food. Trans fat-free and aluminium-free so you can eat it every day with your children! With buttermilk from Hokkaido, Japan.

 

Ingredients.
200 g ULTRAMIX pancake mix
1 tbsp matcha green tea
200 c milk or almond milk
1 egg
80 g blueberries
100 g unsweetened yoghurt
2 tsp maple syrup

 

1. drain 100 g unsweetened yoghurt on thick kitchen paper for 15 minutes. It will be looser than Greek yoghurt.
2.Mix 1 200 g bag of ULTRAMIX, 1 tbsp matcha powder, egg and 200 cc milk (or soy or almond milk) and bake in a pan. *When using almond milk, do not make the dough with almond milk drink. The dough will not puff up.
3. Heat the oil (coconut oil) in a frying pan over medium heat. Once the heat is off, pour the dough into the pan and cook on a small to medium heat for 2 minutes, then when it starts to pout and bubble, turn it over and cook the other side for 1.5 minutes.
4. make the yoghurt cream by combining the strained yoghurt with the maple syrup. Serve with the yoghurt cream and blueberries!

 

Healthy yoghurt cream can be used as a substitute for whipped cream in a variety of applications. Yoghurt & blueberries are refreshing and light. Perfect for breakfast. Use almond milk for a chewier texture.

ULTRAMIX pancakes can be frozen. To eat, thaw naturally and heat in the microwave for 20 seconds.
