Matcha pancakes Marzipan rolls

Bright green pancakes baked with soy milk are stuffed with homemade marzipan and topped with dark chocolate sauce. Marzipan is a semi-solid paste made from almonds and sugar. It is a traditional sweet in Europe. By rolling the marzipan, it becomes a pancake roll like a Western pastry. It is a perfect sweet for tea time.

You can make them with trans-fatty acid-free ULTRAMIX Pancake mix. How about some simple and healthy pancakes?

ULTRAMIX Pancake mix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancake mix 200g
  • 1 egg
  • Soy milk 200ml
  • 1 tablespoon matcha powder
  • [For marzipan]
  • 150g almond powder (poodle)
  • 4-5 tablespoons powdered sugar
  • 1/2 cup water
  • 1 tablespoon butter (room temperature)
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla oil
  • 150g melted dark chocolate

How to cook

  1. Melt the dark chocolate in a water bath. Put the eggs and soy milk in a bowl and mix well.
  2. Add the ULTRAMIX Pancake mix and matcha powder to ① and mix thoroughly.
  3. Put oil (or coconut oil) in a frying pan and heat it over medium heat. After turning off the heat, pour the batter into the frying pan with a spoon and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes. (About 12 cm in diameter)
  4. Make the marzipan. Put the almond powder and powdered sugar in a bowl and mix well with a whisk.
  5. Add butter, water, lemon juice, almond extract, and vanilla oil to ④ and mix.
  6. Place the pancake on a plate, top with the marzipan and roll.
  7. Top with melted chocolate sauce.

This marzipan recipe is not as thick as a doll-making cake, but rather a loose cream. The thinner the dough, the easier it is to roll the marzipan. If you pinch it, it will drip, so cut it into bite-sized pieces on a plate and enjoy.
