Macadamia and hazelnut milk pancakes
Healthy pancakes made with mashed bananas and baked with plant-based hazelnut milk.

Ingredients
- Ultramix Pancake Mix 200g
- 1 egg
- Organic hazelnut milk 100ml
- 100g unsweetened yogurt
- 50g unsalted macadamia nuts
- 100g unsalted butter
- 1 banana
- Maple syrup (as needed)
- Dried fruits (as needed)
- 1 tablespoon coconut oil
How to cook
- Roast the macadamia nuts in a frying pan, then chop and divide them into thirds. Mash the bananas.
- Mix 1 egg, yogurt, and hazelnut milk in a bowl, then add 1/3 of the roasted macadamia nuts from step 1 and the mashed banana, and mix well.
- Add the Ultra Mix and mix gently to form a dough.
- Heat oil (or coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes.
- Beat the unsalted butter until it becomes fluffy. Add 1/3 of the roasted macadamia nuts from step 1 and mix.
- Stack the pancakes, 4) drizzle with macadamia butter, top with the remaining macadamia nuts and maple syrup, and garnish with dried fruit if desired.
Baking with coconut oil goes well with the banana and nuts in the batter, giving it an Asian sweet flavor. Hazelnut milk has a smooth texture and a rich, nutty aroma with a slight sweetness. The fluffy butter containing macadamia nuts envelops the pancakes with a mellow richness, making it an exquisite treat. After adding the Ultra Mix to the batter, mix lightly. If you mix too much, it will be difficult for it to rise.
