Easy Cake Sale (Salty Pound Cake) Recipe Using Pancake Mix

Ingredients
- ULTRAMIX Pancakemix 200g
- 2 eggs
- 75ml soy milk
- 2 tablespoons mayonnaise
- Salt and pepper to taste
- 2-3 sausages
- 1/2 carrot
- 1/2 onion
- Block cheese 5cm
- Nutmeg (as needed)
How to cook
- Preheat the oven to 180°C.
- Cut the sausage into small pieces, dice the peppers, carrots, and onions, and cut the cheese into 5mm cubes.
- Put the eggs, mayonnaise, and soy milk in a bowl and mix well with a whisk. Season with salt and pepper.
- Add the ULTRAMIX Pancakemix in batches and mix gently to form a dough.
- Line a pound cake mold with baking paper or coat it with butter, and pour in the batter from step 4. Lift the mold and tap it gently to remove any air bubbles.
- Bake in a preheated oven for 40 minutes.
- Once cooled, remove from the mold and slice. You can also wrap each slice in plastic wrap and freeze it. When ready to eat, air dry and then microwave for 20 seconds.
You can also replace sausages with bacon, vegetables with herbs, and add sesame or curry powder. Using rich cheese will make it even more luxurious. At home, I bake it on the weekend and store it for my high school son to take as breakfast. It's also good for taking to cram school or as a midnight snack.
