Recipe for an easy apple and cheese cake (salty pound cake) made with pancake mix
I got some cheap green apples so I thought I'd make a pound cake, but my son likes salty cookie so I added cheese. I added butter so it turned out moist like bread. It's slightly sweet and salty, so you won't get tired of the taste. As usual, I sliced it and froze it, and I microwaved it for 20 seconds every morning before school for him to eat.
You can make it with trans-fatty acid-free ULTRAMIX Pancakemix. How about a simple and healthy breakfast?

Ingredients
- ULTRAMIX Pancakemix 200g
- 1 egg
- 100ml milk
- 100g unsalted butter
- Salt and pepper to taste
- 4 green apples
- 50g coconut sugar
- 100g block cheese
How to cook
- Bring the butter to room temperature (or place in a hot water bath). Preheat the oven to 180°C. Cut the block of cheese into 5mm cubes.
- Peel the green apples, remove the cores, and cut them into bite-sized pieces. Place them on a heat-resistant plate, top with coconut sugar, mix quickly, cover with plastic wrap, and microwave at 600W for 5 minutes. Leave to cool, still covered with plastic wrap.
- Put room temperature unsalted butter (or butter that has been heated in a water bath) and eggs in a bowl and mix well with a whisk.
- Add the cheese cut into 5mm cubes and mix well with a spatula. Season with salt and pepper.
- Add the ULTRAMIX Pancakemix in batches and mix gently to form a dough.
- Line a pound cake mold with baking paper or coat it with butter, and pour in the batter from step 5. Lift the mold and tap it gently to remove any air bubbles.
- Bake in a preheated oven for 40 minutes.
- Once cooled, remove from the mold and slice. You can also wrap each slice in plastic wrap and freeze it. When ready to eat, air dry and then microwave for 20 seconds.
A satisfying cake filled with chunks of apples. It goes well with my current obsession with mate tea. If you add sugar and cinnamon to the batter and use raisins or walnuts instead of cheese, you can make a moist apple pound cake.
