Pancakes with coconut sauce

Pancakes topped with a healthy sauce made by boiling down coconut milk and thickening it with potato starch. Topped with desiccated coconut (coconut chips) and almonds to make it even healthier. You can get plenty of coconut nutrients.

Ingredients

  • ULTRAMIX Pancakemix 200g
  • 1 egg
  • 200ml milk or vegetable milk
  • 100ml coconut milk
  • 1 1/2 tablespoons granulated sugar
  • 1 1/2 teaspoons potato starch
  • 3 tablespoons desiccated coconut (coconut chips)
  • 3 tablespoons roasted almonds
  • 1 tablespoon organic coconut oil

How to cook

  1. Make the coconut sauce. Put 100ml of coconut milk, 1 1/2 tablespoons of granulated sugar, and 1 1/2 teaspoons of potato starch in a saucepan, boil until thickened, then let cool.
  2. Chop the roasted almonds with scissors.
  3. ULTRAMIX Pancakemix 200g (one bag), one egg, 200cc of milk (or plant-based milk such as soy milk or almond milk), and 2 tablespoons of coconut oil to make the batter, and fry in a frying pan.
  4. Heat oil (coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 minutes.
  5. Stack the pancakes and top with coconut sauce, desiccated coconut (coconut chips) and crushed almonds.

It's lightly sweet and has a refreshing coconut flavor, perfect for a holiday breakfast. It's a menu you'll want to eat with superfood coconut. It's a little like a Hawaiian beachside cafe. When using almond milk, you cannot make it with commercially available almond milk drinks. The dough will not rise.

ULTRAMIX Pancakemix can be frozen. When ready to eat, let it thaw naturally and then microwave for 20 seconds.
