Coconut and oatmeal biscuits
Coconut biscuits baked only with organic coconut chips (fine) and oatmeal. If you have only coconut fine, you can easily make them with leftover oatmeal or cereal. You can also add granola or dried fruit. These are healthy biscuits with no added sugar.
Ingredients
- 2 cups organic desiccated coconut (coconut chips)
- 2 tablespoons oatmeal
- 2 tablespoons coconut flour
- 1 egg
- 2 tablespoons olive oil (or coconut oil)
- 1 tablespoon honey
- A pinch of salt
How to cook
- Preheat the oven to 180°C.
- In a bowl, mix 1 egg, 2 tablespoons of olive oil (or coconut oil), 1 tablespoon of honey, and a pinch of salt.
- Add plenty of coconut flakes (about 2 cups), 2 tablespoons of oatmeal, and 2 tablespoons of coconut flour and mix with a rubber spatula.
- Place a sheet of baking paper on top of the baking tray, roll the ingredients from step 2 into bowls, arrange them on top, and then flatten them out using a rolling pin or similar.
- Bake in a preheated oven at 180 degrees for about 15 minutes.
- Once cooked, place on a cooler (wire rack) to cool.
Just leave them to cool and you'll be satisfied with the crispy texture and crunchy coconut flavor. If you mix in nuts or dried fruit, you'll have a healthy biscuit that's like a cereal bar.
