ULTRAMIX Pancake mix Fruit and Nut Christmas Stollen Recipe

Stollen, a German Christmas treat, can be made easily without fermentation. If you use rum raisins or rum-soaked dried fruits, you don't need to get rum or soak them the night before, so it's easier and less time-consuming. If you can't get them, dry nuts or parboiled dried fruits thoroughly and soak them in rum the night before. Finished size: 25cm x 12cm (thickness 3-4cm).

You can make a healthy stollen using trans-fat free ULTRAMIX Pancake mix.

ULTRAMIX Pancake mix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancake mix 200g
  • 1 egg
  • 50g unsweetened yogurt
  • 3 tablespoons coconut sugar
  • Rum-soaked dried fruits and nuts 120g
  • 60g unsalted walnuts
  • 1 teaspoon cinnamon powder
  • Allspice (as needed)
  • 1/4 teaspoon unsalted butter
  • Powdered sugar (sugar powder)

How to cook

  1. Preheat the oven to 180°C. Roughly chop the walnuts. Mix the eggs, coconut sugar and yogurt in a bowl.
  2. Add the ULTRAMIX Pancake mix to ① and mix well. Then mix in the dried fruits and nuts, walnuts, cinnamon, and allspice, and mix well with a rubber spatula, turning the whole mixture from the bottom. Combine the dough into one.
  3. On a floured surface (not included in the recipe), roll out the dough into an oval shape about 20cm long.
  4. Fold the dough in half, leaving about 2cm of the edge.
  5. Place a sheet of baking paper on a board, place ④ on it, and bake in a 180℃ oven for 18 to 20 minutes.
  6. While it's hot, spread butter on the surface.
  7. Once cooled, sprinkle with powdered sugar and it's done.

A slightly spicy, adult flavor. If you can't get allspice, add a little more cinnamon. If you have nutmeg and cloves, add a little more for a deeper flavor. The dough is packed with rum-soaked dried fruits and walnuts, making it firm and satisfying to eat. It's crispy on the outside and moist inside.
