Chia seed and coconut milk pancakes

Ingredients
- ULTRAMIX Pancake mix 200g
- 1 tablespoon chia seeds
- 200cc coconut milk (or almond milk)
- 1 egg
- 4 tablespoons roasted unsalted almonds
- 1/2 gold kiwi
- 100g unsweetened yogurt
- 1 tablespoon organic coconut oil
How to cook
- Drain 100g of unsweetened yogurt on thick kitchen paper for about 15 minutes. It will be a little thinner than Greek yogurt. Slice the gold kiwi.
- Chop 4 tablespoons of roasted unsalted almonds with scissors.
- ULTRAMIX Pancake mix 200g (one bag), 1 egg, 200cc almond milk, 1 tablespoon chia seeds, and 2.5 tablespoons chopped almonds to make the dough.
- Heat oil (coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 minutes.
- The aroma of coconut and almonds brings a slight sweetness, making it 100% satisfying even without adding any sweeteners. Unsweetened yogurt and kiwi make it even healthier.
