Whole wheat buckwheat and almond milk pancakes

Ingredients
- ULTRAMIX Pancake mix 130g
- Buckwheat flour 70g
- 250cc almond milk
- Cashew nuts, unsalted, 30g
- 1 banana
- Blueberries (optional)
- Maple syrup to taste
- 1 tablespoon organic coconut oil
How to cook
- Slice one banana into bite-sized pieces.
- Roast 30g of unsalted cashew nuts in a frying pan until browned.
- ULTRAMIX Pancake mix 130g (one bag), 70g of whole wheat buckwheat flour and 250cc of almond milk to make the dough.
- Heat oil (coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 minutes.
- Stack the pancakes, top with bananas and blueberries, top with roasted cashews and serve with maple syrup.
