Easy Ogura Pound Cake with Boiled Azuki Beans

You can make a pound cake that is not too sweet and has the elegant texture of boiled azuki beans. The beautiful cut surface makes it perfect for entertaining guests or as a gift. It is also delicious if you add matcha powder to the batter. Adjust the amount of sugar to your liking.

ULTRAMIX Pancake mix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancake mix 200g
  • 2 eggs
  • 100ml milk
  • 100g unsalted butter
  • 80g sugar
  • One-touch pouch with 2 rows of adzuki beans

How to cook

  1. Preheat the oven to 180°C. Leave the unsalted butter at room temperature or in a hot water bath.
  2. Add the melted butter and sugar to a bowl and mix well with a whisk.
  3. 2. Add the eggs and milk and mix further.
  4. Add the ULTRAMIX Pancake mix in batches and mix gently to form a dough.
  5. Line a pound cake mold with baking paper or coat it with butter, then pour in the batter from step 4. Lift the mold and tap it gently to remove any air bubbles.
  6. Press the "One-touch Azuki Pouch" firmly onto the top of the dough, extruding it into two lines. It is best to push out the amount a little firmly.
  7. Bake in a preheated oven for 40 minutes. *The size of the pound cake mold in the photo is 22 x 12 x 6 cm.
  8. Once cooled, remove from the mold and slice. You can also wrap each slice in plastic wrap and freeze. When ready to eat, thaw naturally and microwave for 20 seconds.

Using the "One-touch Pouched Azuki Beans," you can easily use only the amount you need and make it easily. The pouch has a stopper, so it's convenient for storing any leftovers. It has firm grains and is not too sweet. If you put it on toast with butter, you can enjoy the popular Ogura toast.
