Black pancakes made with tiger nut milk

Jet black pancakes baked with plant-based milk, tiger nut milk. The Greek yogurt topping is also colored with bamboo charcoal powder. Despite their striking appearance, these pancakes are healthy and have a subtle sweetness and gentleness from the tiger nuts. They go perfectly with red fruits.

Ingredients

  • ULTRAMIX Pancakemix 200g
  • 1 egg
  • Organic Tiger Nut Milk 200ml
  • 200g unsweetened yogurt
  • 1 teaspoon (just under 2g) of bamboo charcoal powder
  • Blueberries
  • Maple syrup (as needed)
  • Pecan nuts (as needed)
  • Cranberry jam (as needed)
  • A few apple mint leaves (for garnish)
  • Black cherries (as needed)
  • 1 tablespoon organic coconut oil

How to cook

  1. Make the Greek yogurt: Place a thick paper towel in a colander and drain overnight.
  2. 1. Add 1/4 teaspoon of bamboo charcoal powder and mix.
  3. Mix the eggs and tigernut milk thoroughly in a bowl. Add ULTRAMIX Pancakemix 200g (one bag) and 1/2 teaspoon of bamboo charcoal powder and mix well.
  4. Heat oil (or coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and cook for 2 minutes over low to medium heat. When bubbles start to appear, flip it over and cook the other side for 1.5 to 2 minutes.
  5. The pancakes are layered, topped with grey yogurt and pecans.
  6. Drizzle with maple syrup and cranberry jam (if desired), and garnish with black cherries and mint.

You can also make this with other plant-based milks (oats, hemp, almond, cashew, soy, etc.) other than tigernut milk. Garnish with gray Greek (strained) yogurt mixed with bamboo charcoal powder and cranberry jam for a more colorful impact. Also recommended for Halloween.
