Healthy Banana Oatmeal Pancakes

Oatmeal is a low GI food that is packed with nutrients that Japanese people tend to lack. It is softened in milk (or plant-based milk), mixed and baked. You can enjoy the chewy texture.

Topped with bananas caramelized in low GI coconut sugar. ULTRAMIX Pancake mix, which contains buttermilk made from raw milk with the fat removed and is trans-fatty acid free, allows you to make GI-free pancakes.

Ingredients

  • Ultramix Pancake Mix 200g
  • 1 banana
  • 50g oatmeal
  • 300cc milk or plant-based milk (almond, hemp, oat)
  • 1 egg
  • 2 tablespoons coconut sugar
  • 10g roasted almonds
  • 2 tablespoons water
  • 10g salted butter
  • 1 tablespoon coconut oil

How to cook

  1. Put the oatmeal and 100cc of milk in a heat-resistant container and microwave (600W) for 1.5 minutes. Leave the container to cool.
  2. Peel the banana and slice it diagonally.
  3. Make caramelized bananas. Heat salted butter in a frying pan over medium heat, add coconut sugar and water, and heat. When the coconut sugar turns caramel-colored, add the bananas and cook on both sides until browned.
  4. In a bowl, mix the eggs, 300cc of milk (or plant-based milk) and step 1. Add the ULTRAMIX Pancakemix and mix lightly until there are no lumps (if you mix too much, the mixture will not rise).
  5. Heat 1 tablespoon of coconut oil in another frying pan over high heat, then turn off the heat or place on a damp cloth to cool, then pour in a light ladleful of the batter from step 4. Pour from a high angle to make it perfectly round.
  6. When small bubbles start to form (about 1 1/2 minutes), flip it over and cook for 1 1/2 to 2 minutes.
  7. Layer the pancakes on a plate, pour over the caramelized banana and coconut sugar syrup, and top with chopped roasted almonds.

How to Make Coconut Sugar Syrup

Put coconut sugar and water in a heat-resistant container, mix well, and microwave (600W) for 30 seconds. Coconut sugar is made by boiling down and drying coconut sap. Compared to expensive maple syrup, it is affordable and can be used just like regular sugar, and it is economical because you can make syrup whenever you want.
