Banana, blueberry and pecan pancakes
Pecans are rich in omega-9 fatty acids, primarily oleic acid.
These rich pancakes are made without eggs and contain bananas and blueberries. They are perfect for an afternoon snack. If you use plant-based milk (almond milk, oat milk, etc.) instead of cow's milk, they are even healthier.

Ingredients
- ULTRAMIX Pancakemix 200g
- 1.5 bananas
- 200g blueberries
- Plant-based milk (almond, hemp, oat) 240cc
- 100g oatmeal
- 100ml milk
- 50g pecan nuts
- 1 tablespoon organic coconut oil
- Maple syrup (as needed)
How to cook
- Mash one banana with a fork. Put 100g of oatmeal and 100ml of milk (or plant-based milk) into a heat-resistant container and microwave for 30 seconds. Leave to cool.
- Place the pecan nuts in a plastic bag and crush them with a meat tenderizer (you can also cut them with a knife or scissors). Slice 1/2 a banana into bite-sized pieces.
- ULTRAMIX Pancakemix 200g (one bag), 240cc of plant-based milk (almond milk, oat milk, coconut milk, hemp milk), and oatmeal softened in milk and a banana to make the dough.
- Heat oil (coconut oil) in a frying pan over medium heat. After turning off the heat, pour the batter into the pan and bury a few blueberries in the batter with your fingers. Cook over low to medium heat for 2 minutes, then flip and cook the other side for 1.5 minutes.
- Stack the pancakes and top with sliced bananas, blueberries, chopped pecans, and drizzle with maple syrup or honey, if desired.
It's quite rich because it contains bananas and blueberries. It's sweet enough even without maple or honey. The heated blueberries are like fruit jam. Adding nutritious pecan nuts makes it the perfect pancake!
