Easy Apple and Cream Cheese Pound Cake Recipe Using Pancake Mix

Cream cheese and apple pound cake. The apple slices with the skin still on are arranged on top to create an impressive visual. The apples are mixed in and baked as is, so the sourness and texture of the apples remain, giving it a slightly sweet and fruity taste. It has a refreshing texture similar to apple pie.

ULTRAMIX Pancakemix was created in the kitchen for baby food. It is trans fat-free and aluminum-free, so you can eat it with your kids every day! Contains buttermilk from Hokkaido.

Ingredients

  • ULTRAMIX Pancakemix 200g
  • 1 egg
  • Cream cheese 18g x 6
  • 100ml milk
  • 50g coconut sugar
  • 2 green apples

How to cook

  1. Bring the cream cheese to room temperature (or place in a water bath). Preheat the oven to 180℃.
  2. Cut the green apple into quarters with the skin still on, slice one quarter lengthwise (about 2mm thick) with the skin still on, then cut it in half lengthwise. Peel the remaining apple and cut it into similarly sized pieces.
  3. In a bowl, whisk together the room temperature cream cheese (or the cream cheese that has been boiled in water) and coconut sugar. Add the eggs and milk and mix well until smooth.
  4. Add the ULTRAMIX Pancakemix in batches and mix gently to form a dough.
  5. Add the peeled and chopped apples and mix well to form a dough.
  6. Line a pound cake mold with baking paper or coat it with butter, and pour in the batter from step 5. Lift the mold and tap it gently to remove any air bubbles.
  7. Place the apples with the skin on lengthwise on top of the dough.
  8. Bake in a preheated oven for 40 minutes.
  9. Once cooled, remove from the mold and slice. You can also wrap each slice in plastic wrap and freeze it. When ready to eat, air dry and then microwave for 10 to 20 seconds.

Last time, I made a savory pound cake using processed cheese, but this time I made a pound cake that preserved the juiciness of the apples. Even though I used half the amount of apples, I baked them without heating them in the microwave, so it was more filling and had a fruity taste. This is also perfect for breakfast.
